Chocolate Eclair Bars

I have been wanting to make eclairs but I still have slices of chocolate cake from our kids monthly birthday and fridge is still packed with ingredients.... tsk, tsk, tsk...

But wait! Small slice won't hurt.  Let me give justice to these cakes (nom, nom, nom). Now, cakes are out and eclair is in!  Yey! So again, here is another day of dessert--ing.



ECLAIR BAR
Ingredients:

1 pack graham crackers
1 1/2 cups Vanilla Pudding or use 2 boxes of  Jell-o instant pudding mix -prepare as instructed
1 cup whipped cream or  8 oz cool whip

Chocolate fudge or melted chocolate

Assemble:
1. Mix pudding and whipped cream to make the filling. Set aside.
2. Place 1 layer of graham crackers on your preferred container.
3. Cover with a layer of filling.
4. Then cover with another layer of graham and another layer of filling. You can make 3 or more layers of graham as to your preference. And be generous with your filling. ;-)
5. Then top with chocolate fudge or melted chocolate.
6. Refrigerate for 4 hours.
7. Remove from fridge and slice into bars before serving.
