SOUR CREAM ENSAYMADA

I have been keeping a cup of sour cream for a cheesecake craving but the absence of "baking adrenaline" causes delays.  With its expiration date draws near, I decided to make use  rather than waste it but not on cheesecake. As they say, reducing calories is a key to weight loss, huh! so I am thinking of ensaymada instead. Still cheesy but lesser evil. {wink}

Since it's been a while since I made ensaymada for our little rascals, so I decided to knead some to salvage my cup of sour cream. So here we go...


SOUR CREAM ENSAYMADA

Ingredients:

2 1/2 cups bread flour
3 tbsp sugar
2 tsp instant yeast
1/2 tsp salt
1 c sour cream
1/4 c water
2 tbsp unsalted butter, melted
1 egg
1 tsp vanilla
1 bar cheese grated: 1/2 c mix with the dough, the rest is for topping

egg wash for brushing: 1 tsbp water with 1 egg whisk together

Procedure:

1. Place flour in a bowl of the stand mixer, add sugar and yeast. Using a doth hook, mix to combine.
2. Add sour cream, egg, butter, sugar and vanilla. Mix to incorporate.
3. When the mixture started to form a ball add the grated cheese. I have my moments with cheese so now, I generously add some cheese.
4. After everything is well combined, continue kneading for 15 minutes.
5. When done, roll into big ball. Place it back in the mixing bowl and cover with cling wrap. Let it rest for an hour to double the size.
6. After an hour, punch and divide dough into 35 grams small ball. Use flour to dust your work area to prevent the dough from sticking. (You may or may not) Line tray with parchment paper before placing the small dough.
7. Proof this small doughs for another hour.
8. Pre-heat oven to 175 degrees with fan. Brush dough with egg wash before placing it inside the oven.
9. Bake bread for 10-15 minutes or until lightly brown. 
10. Remove and cool before brushing with butter mix and top with grated cheese.

for butter mix, combine together:
1/2 c powdered sugar
1/2 c unsalted butter

As the dough is on the salty/ soury side, being generous on sugar is excusable =)

Result.... soft and fluffy ensaymada.  What are you waiting for, mix that coffee or milk tea and Enjoy!
