Tonight is pizza night! We often had pizza once a week but i spared myself of blogging obligations, it's like winter-- everything is in hibernation. But today is exceptional-- I'm on high spirit so let's heat it up!
Parsley Pizza Dough
Ingredients:
4 cups bread flour
1 packet of instant yeast
1 tsp salt
1/2 tsp sugar
3/4 c milk
3/4 c water
2 tbsp EVOO
1/2 tbsp dried parsley
Place dry ingredients in a mixing bowl and combine.
Add wet ingredients and mix until it forms a ball. Should it be dry just add water tbsp at a time to moisten the dough likewise, if it gets watery, add flour tbsp at a time too. When done, remove and form into a ball.
Place in a bowl then cover with cling wrap.
Proof for an hour.
After an hour, punch and remove the dough from the bowl and place it on a clean counter. Divide the dough into 3.
Rest each dough for another 30 minutes to an hour.
(This will give you enough time to prepare your sauce and toppings.)
Then ready to use.
White Sauce
2 tbsp unsalted butter
2 tbsp flour
1 c milk
3/4 c pasta cheese or any cheese of your choice
salt and pepper to taste
Place butter on a pan, add flour then stir. Add milk and continue mixing until thickened. Add salt and pepper then the cheese, continue stirring until the cheese is melted. when done, Set aside in a bowl and cover with cling wrap.
Topping:
2 tbsp EVOO
Onion generous amount, sliced
1/2 chicken breast
Bell pepper
Sweet basil
pepper
1 to 1 1/2 tbsp Oyster sauce
Cayenne (optional)
Additional toppings:
Fresh Cherry tomatoes
Shredded Mozzarella Cheese
Sauté onions in EVOO, then add chicken and cook until tender.
Add pepper and oyster sauce then add basil and bell pepper. Stir.
Remove from heat.
Assembling:
Take half of the pizza dough and roll out onto the board/ counter dusted with cornmeal or flour.

Spread white sauce leaving an inch from the edges.
Top with chicken, tomatoes and mozzarella cheese.
Transfer pizza on the pizza tray.
Bake @ 200 degrees for 15-20 minutes.
Serve hot.
