ALMOND COOKIE

Cookie can be traced back as early as 7th Century AD in Persia (present day Iran). They believed to be the first country who grew and harvest sugar cane which is one of the cookie ingredients. Amidst War and Explorations, sugar, spices and cookies were introduced to Mediterranean area and Europe and became popular at the end of 14th Century. Time evolved so are baking and cooking. Cookies developed from a simple mixture of flour and sugar to varying flavours of chocolates, nuts and fruits in different shapes and sizes. Indeed a classic treat for everyone!

Sharing this simple cookie recipe --

ALMOND COOKIES

makes about 15 round cookies


Ingredients

1 c almond flour

2 ½ tbsp caster sugar

2 ½  tbsp unsalted butter, room temperature

1 ½ tsp milk

1/8 tsp salt

Slivered Almonds or Almond slices to top, optional

 

Combine all ingredients in a bowl. Stir to combine until no lumps.

Shape the dough into ½ inch ball.

Place in a baking tray 2” apart.

Flatten with fork or bottom of a measuring cup.

Bake at 175°C for 15 minutes until golden.

Remove from oven and cool in the tray for about 10 minutes before transferring to the cooling rack and cool completely.
